Friday's Four New Recipes

 

Butter Chicken

Ingredients:
1 cup crushed buttery round cracker crumbs
2 eggs, beaten
ground black pepper to taste
1/2 teaspoon garlic salt
4 skinless, boneless chicken breast halves
1/2 cup butter, cut into pieces
Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper.
3. Dip chicken in the eggs, and then dredge in the crumb mixture to coat.
4. Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
5. Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear .




Beef Noodle Bake
From The Taste of Home Cookbook
Prep: 15 min.  Bake: 35 min.
1-1/2 pounds ground beef
1 small onion, chopped
2 cans (8 ounces each) tomato sauce
1 cup (8 ounces) sour cream
1 package (3 ounces) cream cheese, cubed and softened
1 teaspoon sugar
1/2 teaspoon of garlic salt
7 cups uncooked wide egg noodles, cooked and drained
1 cup (4 ounces) shredded cheddar cheese

1. In a large skillet, cook beef and onion until meat is no longer pink; drain. Remove from the heat; stir in the tomato sauce, sour cream, cream cheese, sugar, and garlic salt.

2. Place half of the noodles in a greased 9x13 baking dish; top with half of the beef mixture. Repeat layers. Cover and bake at 350 degrees for 30-35 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted. 
Yields: 6 servings 
 No pictures of this one...it was kind of a weird recipe. Not so sure that I like the cream cheese in it.
Barbecued Pork in the Slow Cooker
From: Fix it and forget it cookbook
Makes 6-8 Servings
2-3 lb. boneless pork roast (I used a pork loin (not tenderloin) cubed
2 onions, chopped into big chunks
12 oz bottle of BBQ sauce
1/4 cup of honey
sandwich buns or rolls

1. Place meat in slow cooker. Add onions, bbq sauce, and honey.
2. Cover. Cook on low for 6-8 hours.
3. Use 2 forks to shred meat. 
4. Serve on rolls with sauce (and I add coleslaw on my sandwich!)
 We took this and the apple crisp to our friends from church who just had a baby almost 2 weeks ago. Both were DELICIOUS if I do say so myself! :)
Mom's Apple Crisp
From Pampered Chef's All The Best cookbook
Prep time: 25 minutes Microwave time: 14-16 minutes 

6 Granny Smith Apples (or any kind of apples), peeled, cored and sliced
8 long graham crackers coarsely chopped
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick or old fashioned oats
1 teaspoon of cinnamon
1/2 cup (or 1 stick) of butter or margarine, melted
Vanilla Ice Cream (optional- but really, who wouldn't eat vanilla ice cream with this goodness!)

1. Peel, core and slice apples. Cut apples in half and place in a casserole dish (I used my large corning wear, this book tells you to use the pampered chef deep dish baker (I do not own this yet :)
2. Coarsely chop graham crackers (I used my food chopper from PC); place in large bowl. Add brown sugar, flour, oats and cinnamon. Mix well. Place butter in a microwave safe dish and cook on high for 1 minute or until melted. Add butter to dry ingredients; mix well. 
3. Sprinkle crumb mixture evenly over apples. Microwave on High 14-16 minutes uncovered or until apples are tender. Cool slightly. Serve warm topped with ice cream, if desired....that's a must! 
Yields: 10 servings.    
 no pictures but this was awesome!! Will definitely be making the 3 out of 4 of these recipes again!
