7 Facts Award!

I am so excited to receive another blog award! Sweet Heather over at Greer's Gossip awarded me with the Seven Facts Blog award! If you haven't stopped by her blog, check it out! It's super cute and she's a fellow teacher like me! Thanks, Heather for this award!
1. WE CAUGHT THE MOUSE FINALLY!!! One week later and I hate to be cruel but that little booger wasn't welcome in the Clark Household...(if you have no idea why I'm writing this see this post!) In the end, we spent way too much money on traps, glue pads (I know I know...so inhumane..but desperate times call for desperate measures) and little ultra sonic sound things that plug in your outlets that drive mice/other rodents nuts. We got home this evening from being away for over 24 hours and....I'll spare you the details. I'm just glad I can rest easy tonight.

2. Blogging- My husband started a blog and my other friend, Kelsey, started a blog about her and her husbands adventures in Grenada (He's in Med school there), and so I thought, "Hey, I'm going to be training for my first half-marathon and would like to blog about it." So I started Half Marathon Trainee Blog. Then about a month later, I started another blog just about My life in pictures but slowly I was becoming less interested in just posting pictures, so I changed it to Teach.Run.Love and now I have neglected my half marathon blog. I'm debating whether or not to merge my half marathon blog to this blog. I also have loved reading my real life friends that have blogs and meeting new blog friends in blog world :)

3. I am learning to love to cook and bake! I have really enjoyed making new recipes each week and broadening our taste buds! I regret not being in the kitchen more with my mom growing up learning how to cook, but better late than never, right? :)

4. I've completed 2 half marathons but I haven't even done a 5K race. That will all change this coming weekend when I do my first 5K around the Opryland Hotel!

5. I would love to go see Carlo's Bakery from Cake Boss! I would also love to learn how to decorate and make awesome cakes!

6. I love to go on cruises! Well, I've only been on one-for our honeymoon in the Southern Caribbean, but one trip can make you fall in love with cruises. We want to go on an Alaskan cruise and Mediterranean Cruise in the near future!

7. I really miss seeing my family. We are 6 hours apart from each other and I have definitely missed hanging out and going shopping with my momma.

Friday's Four New Recipes

 

Butter Chicken

Ingredients:
1 cup crushed buttery round cracker crumbs
2 eggs, beaten
ground black pepper to taste
1/2 teaspoon garlic salt
4 skinless, boneless chicken breast halves
1/2 cup butter, cut into pieces
Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper.
3. Dip chicken in the eggs, and then dredge in the crumb mixture to coat.
4. Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.
5. Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear .




Beef Noodle Bake
From The Taste of Home Cookbook
Prep: 15 min.  Bake: 35 min.
1-1/2 pounds ground beef
1 small onion, chopped
2 cans (8 ounces each) tomato sauce
1 cup (8 ounces) sour cream
1 package (3 ounces) cream cheese, cubed and softened
1 teaspoon sugar
1/2 teaspoon of garlic salt
7 cups uncooked wide egg noodles, cooked and drained
1 cup (4 ounces) shredded cheddar cheese

1. In a large skillet, cook beef and onion until meat is no longer pink; drain. Remove from the heat; stir in the tomato sauce, sour cream, cream cheese, sugar, and garlic salt.

2. Place half of the noodles in a greased 9x13 baking dish; top with half of the beef mixture. Repeat layers. Cover and bake at 350 degrees for 30-35 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted. 
Yields: 6 servings 
 No pictures of this one...it was kind of a weird recipe. Not so sure that I like the cream cheese in it.
Barbecued Pork in the Slow Cooker
From: Fix it and forget it cookbook
Makes 6-8 Servings
2-3 lb. boneless pork roast (I used a pork loin (not tenderloin) cubed
2 onions, chopped into big chunks
12 oz bottle of BBQ sauce
1/4 cup of honey
sandwich buns or rolls

1. Place meat in slow cooker. Add onions, bbq sauce, and honey.
2. Cover. Cook on low for 6-8 hours.
3. Use 2 forks to shred meat. 
4. Serve on rolls with sauce (and I add coleslaw on my sandwich!)
 We took this and the apple crisp to our friends from church who just had a baby almost 2 weeks ago. Both were DELICIOUS if I do say so myself! :)
Mom's Apple Crisp
From Pampered Chef's All The Best cookbook
Prep time: 25 minutes Microwave time: 14-16 minutes 

6 Granny Smith Apples (or any kind of apples), peeled, cored and sliced
8 long graham crackers coarsely chopped
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick or old fashioned oats
1 teaspoon of cinnamon
1/2 cup (or 1 stick) of butter or margarine, melted
Vanilla Ice Cream (optional- but really, who wouldn't eat vanilla ice cream with this goodness!)

1. Peel, core and slice apples. Cut apples in half and place in a casserole dish (I used my large corning wear, this book tells you to use the pampered chef deep dish baker (I do not own this yet :)
2. Coarsely chop graham crackers (I used my food chopper from PC); place in large bowl. Add brown sugar, flour, oats and cinnamon. Mix well. Place butter in a microwave safe dish and cook on high for 1 minute or until melted. Add butter to dry ingredients; mix well. 
3. Sprinkle crumb mixture evenly over apples. Microwave on High 14-16 minutes uncovered or until apples are tender. Cool slightly. Serve warm topped with ice cream, if desired....that's a must! 
Yields: 10 servings.    
 no pictures but this was awesome!! Will definitely be making the 3 out of 4 of these recipes again!

No Wedding Wednesday this week..

My college roomie hasn't had the chance to write her guest post about her wedding this week, so her debut will be next wednesday.

2. -I got my haircut last night like:  Amy Jergens from The Secret Life of the American Teenager! I LOVE IT! I need to take a picture of myself to share!
-A first that Derek and I are experiencing is a mouse in the house....GROSS! I am not a big fan whatsoever! We discovered evidence this past Sunday morning (hole in a brand new bread bag and droppings). So we bought some fancy traps so we wouldn't have to see the dead little thing. This little guy is smart and I've seen him twice...screamed the first time and was far enough away that I was cautiously watching from afar. We've moved the traps and yet, the little booger is still living...any suggestions how to get rid????? HELP!
-I am currently training for my 3rd half marathon! I've never been the athletic type but this is something I've recently been interested in and I'm excited about all that I've accomplished! I am still a "runner" in training but I'm working up to it. I like walk/running! 
-I am trying to fix four new recipes a week to add some variety in our day to day meals! Some weeks are better than others! Check out my Friday's Four New Recipes series! 
-This is my second year teaching. I have taught both years in 1st grade and love it! My little firsties are so cute and funny! They drive me crazy some days but the days they melt my heart out weigh the crazy days! The second year is so much easier than the first. The first year, I like to refer to as SURVIVAL! Now I know what to expect and what I am suppose to teach!
-My favorite Bible verse is Jeremiah 29:11- "For I know the plans I have for you" declares the Lord, "Plans to prosper you and not to harm you, plans to give you hope and a future." I believe fully to not worry about tomorrow for HE knows what is going to happen. I often struggle with the questions "when will this happen?" "Where will we be in the next several years?" but I always remind myself that God knows everything about us and knows what is best for us. God's timing is perfect timing!
-Seven is my lucky number I was born 7-7-87 at 3:17 weighing 7lb 7oz. I have 7 letters in my first name. When Derek and I started dating I then found out that his baseball number/sports teams number was 7!

Half-Marathon Schedule

Hey Ya'll :) This weekend went by too fast and since I'm not as lucky as most of you all in the working world, us teachers have to go to work tomorrow for a professional development day. Have fun kiddos...teacher has to work..

Anyways, I haven't blogged much about my lack there of running/workouts on this blog since I have my Half-Marathon Trainee blog but since my blog is titled Teach.RUN.love, I suppose I will blog a little about my workout life. I hate to see my half marathon blog fall short since that was the main reason I started blogging and it was my first blog, but I hope to be more in detail over there and give you short snippets over here!

Friday's Four New Recipes

I've been slacking again this week...tight budget for groceries in the Clark household so we improvise and have boring creative meals. We had friends over last Friday night and cooked steak, Bacon Twice Baked Potatoes,  and green beans. They brought turtle brownies and ice cream!

Bacon Twice-Baked Potatoes
2 Medium baking potatoes (I used 5 small potatoes)
2 tablespoons reduced fat butter
1/4 cup fat free milk
1 bacon strip cooked and crumbled (I used 3 strips)
1/4 teaspoon salt
Dash pepper
1/2 cup shredded reduced fat cheddar cheese, divided

Prep: 1 hour 15 minutes       Bake: 20 minutes

1.) Bake potatoes at 375 degrees for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out pulp, leaving a thin shell.

2.) In a small bowl, mash the pulp with butter. Stir in the milk, bacon, salt, pepper and 1/3 cup of cheese. Spoon into potato shells. Top with remaining cheese.

3.) Place on a baking sheet . Bake for 20-25 minutes or until cheese is melted.

2 Servings or 4 with the smaller potatoes.

These were great! This was my first try at twice baked potatoes and everyone loved them!


For Valentine's Day, Hubby made us dinner of Chicken Parmesan and I made dessert.

Hubby's Chicken Parmesan

2 boneless skinless chicken breasts
Can of bread crumbs
2 eggs
Shredded Mozzarella Cheese
Grated Parmesan Cheese
Large gallon size zip lock bag
Jar of spaghetti sauce
spaghetti noodles

Rinse chicken, pour some of the bread crumbs and some Parmesan cheese into the plastic gallon size bag, dip chicken in the egg, place chicken in bag and shake around. Place chicken in a 8x8 or 9x13 pan and top with mozzarella cheese. Bake for 35 minutes at 375 degrees. Last 5 minutes, top with spaghetti sauce and Parmesan cheese.
Boil noodles for 9 minutes and drain. Heat rest of spaghetti sauce in a pan on medium to low.

Enjoy!

For Dessert, I made Sweet Apple Crumble
Prep: 15 min.  Bake: 25 min.  2 servings

1 cup chopped peeled tart apples
1-1/2 teaspoons water
1/2 teaspoon lemon juice
1/8 teaspoon ground cinnamon
1 teaspoon butter

Topping:
3 tablespoons semisweet chocolate chips
2 tablespoons brown sugar
2 tablespoons old fashioned oats
2 tablespoons peanut butter
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
Vanilla Ice Cream, optional (forgot this key item at the grocery store)

1. In a bowl, combine apples, water, lemon juice, and cinnamon. Spoon into a 1-qt baking dish coated with cooking spray. Dot with butter.

2. For topping, combine the chocolate chips, brown sugar, oats, peanut butter, flour and cinnamon; crumble over apple mixture. Bake, uncovered, at 350 degrees for 25-30 minutes or until apples are tender. Serve warm with ice cream if desired.
This recipe wasn't what I was expecting. I was thinking more of an apple crisp but it was not so much. The chocolate wasn't good with it. Needless to say, this recipe was clipped out of a magazine and will probably be thrown away.

As for the other meals we had this week, sandwiches, left over chili, and scrambled cheesy eggs with turkey bacon. Next week will be much better and I will definitely have 4 new recipes!!!

Wedding Wednesday- Emily and James Mummert

A guest post by Mrs. Emily Mummert!

James and I first met at Freshman orientation. We remained friends until January of our freshman year until one crazy weekend at Stacy's house in PA! Which is the same place where James proposed to me! He told me he was going home for the weekend while me and the roomies had a girls weekend at the Newburg home. Much to my surprise, he was there when we came back from shopping on his knee in the exact spot where we had our first kiss!

Wedding day: September 5th 2009

It was a GORGEOUS day in September when we tied the knot. We had our ceremony in my childhood church, Church of the Nazarene in New Philadelphia, OH. It was a bird themed wedding, hence the peacock feathers, birds, birdcage veil, and lots of bird seed.  We had real live "doves" (aka white pigeons) that we released after the ceremony. They were actually from Kelsey's dad!!! We named them Fred and Ethel. They supposedly flew back to Kelsey's hometown after we released them.  The three little boys by the birdcage were my cousins and I assigned them to "bird security". Love the picture of Pete pretending he had an ear piece.










My favorite part about the ceremony.... When James and I "tried" to kiss he went to lift my veil (which I had pre warned him not to because it would rip my whole hairdo out!) and I screamed "NO!" Little did I know, James had a mic in his tux and the whole church heard it and everyone was laughing hysterically. It was a moment we will never forget!






The reception:

We had our reception at The Carlisle Inn in amish country. GOOOOOD FOOOOD!!!  We first stopped at a winery for some pretty pictures then headed to the reception for some fun.  The reception place was beautifully decorated with mini birdcages, peacock feathers, and lots of sunflowers. There were other wild flowers mixed in, plus we had a bunch of mums around too. Get it? Mums...MUMmerts! Anyway, the day was perfect and practically flawless.

I too am hoping for another chance to wear my wedding dress!  I'm so glad we got to share the day with all of our friends and family (minus Tiff ;) She was there in spirit).  It's almost been two years into our marriage and we are MORE IN LOVE THAN EVER!

Love Love Love

Usually I am all for Valentine's Day but this year it has been so crazy!!! We dismissed early last Wednesday because of the chance of snow coming. We were out of school Thursday and Friday. (I went to the doc Wednesday afternoon-diagnosed with a sinus infection so the days off were blessings in disguise) Valentine's day in first grade on a MONDAY= pure chaos and insanity!!! We had to play catch up this morning with reading and writing, while trying to do that, get all these little valentines into these cute little boxes the children made and brought in...

 This was such a cute and creative box made by a cutie boy in my class :)

We went to lunch, came back and it was almost party central for an hour. I have wonderful room mom's and parent volunteers who plan the party, so my job is to enjoy and help out! We made a cute little craft:


We played Valentine Bingo with pink and red m&m's. We had chocolate fondue :)
We opened our Valentine's (we were suppose to put them in a scrapbook but ran out of time) and we ate some yummy treats!

Gotta protect my kiddos :) Love the cute little valentine though :) 
I also got lots of candy, cute stationary and these beautiful flowers from some of my students!
After the Valentine's party, I had to get the kids off to their specials class and have a sub in my room for the rest of the day to go over benchmark Aimsweb scores with the first grade team and admin. Talk about a CRAZY BUSY DAY!!!

I also came home to a wonderful surprise!! My hubby came home for lunch and did all the dishes for me. He knows how much I hate doing them and surprised me! He also made us Chicken Parmesan for dinner and we watched What Happens in Vegas with a short intermission to watch House! It was a much needed relaxing evening after the madness of today!
We ate living room style tonight while we were watching our movie :)

Despite the craziness of today, I had much love come from my kids at school and my wonderful hubby!

P.S. HAPPY BIRTHDAY to my baby brother who is 18 today!!! LOVE YOU!

Friday's Four-errr two New Recipes

Scratch out the number four above...this girl was sick most of the week with a sinus infection. Only two new recipes today!
Monkey Bread-
3 cans buttermilk biscuits
1/2 c. sugar
1 tsp. cinnamon
chopped nuts
1 c margarine
1 c brown sugar
Cut biscuits into fourths. Combine 1/2 c sugar and cinnamon, roll biscuit pieces in mixture. Place in layers in greased tube pan, sprinkling nuts on top. Melt margarine: add 1 cup brown sugar and boil for 1 minute. Pour over biscuits. Bake 35 minutes at 350 degrees. (Note to self and others: DO NOT use a tube pan that comes apart (the middle of the pan comes out for easier clean)

I might have to try this one again in my other pan because it didn't turn out really well :(

Ravioli Soup
1 pound ground beef
2 cups water
1 can (28 ounces) crushed tomatoes, undrained
1 can (14-1/2 ounces) crushed tomatoes, undrained
1 can (6 ounces) tomato paste
1 1/2 cups chopped onions
1/4 c. minced fresh parsley
2 garlic cloves minced
3/4 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon onion salt
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
1 package (9 oz.) refrigerated cheese ravioli
1/4 cup grated Parmesan Cheese

1.) In a Dutch oven, cook beef over medium heat until no longer pink; drain . Add the next 14 ingredients (stop before cheese ravioli); bring to a boil. Reduce heat; cover and simmer for 30 minutes.

2.) Meanwhile, cook ravioli according to package directions; drain. Add to soup and heat through. Stir in Parmesan cheese. Serve immediately.

Yields: 10 servings.

Snow Day= Domestic House Wife

Whew! I needed this snow day! My laundry has gone out of control again and so has my kitchen. I also am very appreciative of this snow day because I'm recovering from a sinus infection...it's been nice to rest but get things done too!

For resting: finished the book Heaven is for Real By: Todd and Sonia Burpo. It was simply amazing and I definitely recommend it! The link is under my Books read in 2011 page. I also watched a few Cosby Show episodes on netflix and a disney channel movie on netflix...I'm a sucker for silly kid movies!

For Domestic House wife: I made Monkey Bread this morning but it didn't turn out quite right. Check for the pictures and recipe tomorrow on Friday's Four New Recipes! I cleaned out the oven. I organized the pantry (tried to upload pictures but my sd card reader isn't working and my camera cord is at school, Boo!), the kitchen is almost cleaned, organized the "junk" drawer haha, laundry, and am getting ready to make dinner.

For teacher duties: worked on some reading comprehension activities and worked on making the valentine's I'm giving to my class.

I feel it was a productive day, indeed!

Wedding Wednesday- Post poned

My friend, Emily, didn't get back to my on doing her wedding post, so I am going to post pone her post until next week. I wasn't able to be at her wedding, so I want her to be able to put all the details on here and great pictures! (Not many on Facebook, I could use)

I forgot to post the cake I made for the super bowl!

I finally went to the doctor today since we dismissed at 12:30 because of the threat of snow (it didn't actually come until a little after 4), I have a sinus infection and hopefully after several doses of antibiotic I will be on the road to recovery! I went to Kroger to pick up my prescriptions and get some groceries. After I got home, I POURED the SNOW! I haven't gotten the call telling me about school tomorrow, but hopefully the Hallelujah chorus will ring :)

Tonight and (hopefully tomorrow if we have a snow day) I will be working on and posting our 100th Day rotations activities! I also want to post some classroom door decorations that I had a parent do last year!

Crazy Busy Weekend

I wish my body would have cooperated for this past weekend.

Friday-stayed home with a sick to my stomach feeling and head congestion/sore throat. Derek's parents came into town and we were suppose to go out to dinner. Well we went ahead, came home and I went to bed at 8:30 :(

Saturday- Didn't feel sick to my stomach anymore, but had major head congestion and ran a fever (found that out that night) We went to Dave Ramsey Live event all day in Nashville. It was from 1-6, but we got there around 11: 30. Went to dinner and came home with a fever. Went straight to bed.

Sunday- Stayed home from church, no fever all day, just head congestion. Some friends and family came over for the super bowl and we had great food but I still wasn't feeling the greatest and went straight to bed afterward. Monday morning came too soon and I went to school. Luckily, my kiddos were super sweet and made sure I felt okay and were pretty good all day!


I hope my chapped nose goes away soon....I have been told by some 6 year olds that "Mrs. Clark, something is wrong with your nose, it's all red!!"

Fabulous First Grade Read Alouds!

In my few short years of being a teacher, I know that my first graders LOVE chapter book read alouds! We try to change it up with different series but somehow we keep coming back to the beloved Junie B. I want to share the chapter books that we have read so far. If you would like to purchase the book, there will be a link sending you to amazon!

1. Magic Tree House- The Knight at Dawn by: Mary Pope Osborne was our first read aloud of the year. I thought since the theme of my classroom was "Clark's Castle" and Kingdom-ish, it would be appropriate. The kids loved it and got so into it. The Magic Tree House books are about this brother and sister (Jack and Annie) who find a tree house in the woods by their home. This tree house is filled with books. When you open a book and say "I'd like to go there or I'd like to see that" it takes you to that place.


2. Junie B. First grader, At Last! By: Barbara Park. Junie B. is hilarious. She speaks her mind and blurts out funny stuff before thinking about it.



3. Jigsaw Jones and the Case of the Missing Hamster by: James Preller. Jigsaw Jones is the town's own 2nd grade private eye. The kids loved the this mystery! These books are great because they are really written in their language and quirky!



4. The Boxcar Children By Gertrude Chandler Warner. I loved hearing these books when I was a little girl in school and my students love them as well! The adventures of Henry, Jessie, Violet, and Benny are always exciting.


5. Junie B. Toothless Wonder By Barbara Park. It never fails that an outbreak of loose teeth will occur in first grade. We keep a tooth chart in our classroom and last year we had 16 teeth lost in the month of October. It was so crazy! So of course, this book is most appropriate and will be used every year in my classroom!


6. Magic Tree House Thanksgiving on Thursday By: Mary Pope Osborne. We read this book in November, obviously :) Another great read!


7. Junie B., Jingle Bells, Batman Smells and P.S. So does May. By: Barbara Park. See how we are stuck on Junie B....But she is hysterically funny and the kids get sucked in, so if they enjoy it, I enjoy it! Most of these books, I've never read before, so when I'm reading them, sometimes I stop and think "Did she really just say that?" or I crack myself up, when the kids are suppose to be the ones laughing!

Friday's Four New Recipes


This week was much more successful than lasts! Now I've only made 2 of these recipes but I am going to make the other two for the Super Bowl. (I've had all 4 though!)
Breakfast Casserole
1pkg. Crescent Dinner Rolls
1 lb. sausage or ham (I used lunch meat ham)
2 1/2 c. shredded mozzarella cheese
4 eggs
3/4 c. milk
salt
pepper

Spread out rolls in a 13x9 buttered pan--pinch edges together. Brown 1 lb sausage-chopped fine and drain (or just place the ham over the crescent rolls) put on top of dough. Add cheese next, mix eggs, milk, salt, pepper. Pour on top of cheese. Bake at 425 degrees for approx. 30 minutes until center is solid. Makes 8 large pieces. Can add more eggs and milk if desired.

Golden Potato Soup from Taste of Home magazine

1 tablespoon butter
1 tablespoon canola oil
3 medium potatoes, peeled and cubed
1/2 teaspoon garlic salt
1/8 teaspoon pepper
1 can (14 1/2 oz.) reduced-sodium chicken broth
1 small onion, chopped (I used an estimation with a bag of frozen chopped onions)
1/4 cup crumbled cooked bacon
1 garlic clove, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 cup hot water
2 teaspoons chicken bouillon granules
1 cup heavy whipping cream
1/2 cup shredded cheddar cheese

1. In a large saucepan, heat butter and oil until butter is melted. Add the potatoes, garlic salt, and pepper. Cook over medium heat for 4-6 minutes or until potatoes are tender and lightly browned. 
2. Stir in the broth, onion, bacon, garlic, rosemary, and thyme. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in water and bouillon. Gradually stir in cream; heat through. Add cheese stirring until melted. 

This was wonderful!!! I will definitely make this again!


Batter Bowl Cake-Pampered Chef

-You will need the pampered chef batter bowl
Ingredients: 1 boxed cake mix (18-19 ounces), any flavor.
2-4 cups icing
food coloring

Preheat oven to 350 degrees F. Prepare cake according to package directions. Spray classic batter bowl with vegetable oil spray. Pour batter into prepared Batter Bowl. Bake 55-65 minutes or until toothpick comes out clean from center. Cool 15 minutes on cooling rack, invert. Cool before decorating. Frost and decorate as desired to create a baseball cap, orange half, pumpkin, etc. I'm going to cut it in half vertical and lay each piece flat on a cookie sheet and decorate it like a football for the Super Bowl!

Corn Dip from Rachel Haedge

2 cans Mexican Corn (Fiesta)
1 can White Corn (Shoepeg)
1 can Rotel, drained
1 lb sharp cheese, shredded
1 c. Mayo
1 c. Sour Cream
3 green onions, chopped
Jalapenos, diced (to taste)
Mix all ingredients together. Serve chilled with chips.
