This is from A LONG TIME AGO but it is still so good and in honor that my inlaws are coming down tomorrow, I want to feature one of my mother-in-law's fav recipes. We actually made this together, so the hands that are mixing are my MIL's :)
Chocolate Eclair Cake
3 1/2 cups of milk
2 pkg. French Vanilla pudding (instant)
1 8 oz. Container of Cool whip
Graham Crackers
Approx. 2-3 tbsp of butter
Butter 9x13 pan and line bottom of pan with graham crackers.
Mix pudding with milk at medium speed (approx 2 min.)
Blend in cool whip
Pour half of pudding mixture over graham crackers.
Add a second layer of graham crackers.
Pour remaining pudding mixture over graham crackers.
Cover top with another layer of graham crackers.
Refrigerate 2 hours and then add frosting.
Frosting:
2 1/4 cup of powered sugar
3 pkgs. of Nestle Choco Bake
3 tsp. vanilla
4 1/2 tbsp. softened butter
4 1/2 tbsp milk (add a little at a time-may need more or less)
Mix all ingredients and spread over top layer or graham crackers.
Refrigerate 4 hours. (This could be done the night before and let refrigerate over night as well)

I finally made my own signature by using this tutorial! I made this on picnik.com as well and I'm not sure if I like the pink background but we'll see. I might have to play around with it some more! So glad I figured out how to do this on my own!
